El “Manchado de Jabugo” representa fielmente al cerdo ibérico de antaño al aprovechar como ninguno los recursos de la dehesa y ofrecer unas piezas cárnicas curadas que destacan del resto de las variedades del cerdo ibérico.

Además de recuperar sabores y texturas olvidados, garantizando al máximo el bienestar de nuestros animales, en Dehesa Maladúa estamos comprometidos con la salud de las personas y el respeto a la madre Naturaleza. at Dehesa Maladúa, the pure Iberian pig variety “Manchado de Jabugo” (“Spotted Jabugo”) has been bred and raised in perfect harmony with the pristine habitat of our Mediterranean forest.

The “Manchado de Jabugo” faithfully exemplifies the Iberian pig of olden days. By enjoying the utmost of its pasture’s wealth like no other, our free roaming pigs presents us with charcuterie of a quality that rises above the other varieties of Iberian pig.

In addition to recovering forgotten flavours and textures, we go all out to guarantee the wellbeing of our animals. Dehesa Maladúa’s fealty to mother Nature, and the health of its people and animals, is central in our endeavor. Naturally, our products are certified as organic, and, appropriately, our production is strictly limited.

DOP (“Protected Designation of Origin”), Quality “Summum”

The ham is offered in three ways: the cured leg of ham in its entirety, boned and in pieces, or, in slices packaged in vacuum. In all these three cases the product is presented in a box of wood made by a local artisan from oaks grown in the same region.

Con el jamón de bellota 100% ibérico, calidad “Summum”, de la estirpe “Manchado de Jabugo” Dehesa Maladúa recupera sabores y texturas desconocidos para las generaciones actuales.

En la Dehesa Maladúa los animales viven libremente en un entorno privilegiado, declarado Reserva de la Biosfera por la Unesco.

El lento crecimiento de los ejemplares de esta estirpe de cerdos ibéricos, su rusticidad, la privilegiada alimentación y la maduración de los jamones en bodega hasta seis años, según añada, les confieren sabores y aromas excepcionales. Así lo atestiguan los paladares más finos al situar este jamón en las más altas cotas de la excelencia y el prestigio.

“Dehesa Maladúa” recibió en Nuremberg (Alemania) en 2016 el premio al mejor producto de Biofach, la principal feria de productos ecológicos del mundo, galardón que vino a reforzar la notoriedad de esta empresa familiar comprometida con la preservación de la estirpe “Manchado de Jabugo”, amenazada de extinción, mediante la elaboración sostenible de un jamón único.

Exclusividad y limitada producción - entre 80 y 100 unidades anuales- explican su coste (4.100 €).

Produced from the black Mediterranean pig, Iberian ham is without a doubt Spain’s most notable contribution to the gourmet world.

The reputable “pata negra” designation is reserved exclusively for purebred Iberian pigs fed by the “bellotas” (acorns) from “dehesas” (particular Mediterranean pastures).

Going against current trends, Eduardo Donato, the owner of the family business "Dehesa Maladúa", has pushed the boundaries of excellence in the genuinely “pata negra” Iberian ham trade with a double challenge: having a certified organic production, and recovering the "Manchado de Jabugo ", a variety of Iberian pig on the edge of extinction.

“Dehesa Maladúa’s” Iberian pigs come from certified organic herds, as they are born, raised and bred in the heart of the Andalusian Sierra de Aracena Natural Park (Huelva, Spain). All year round they roam freely in pasture-lands full of evergreen, gall and cork oaks, an ecosystem declared a Biosphere Reserve by UNESCO.

After three years of roaming in freedom and around six years of maturing in a “bodega”, the result is an outstanding organic, pure Iberian acorn-fed ham from the “Manchado de Jabugo” Iberian pig variety, DOP (“Protected Designation of Origin”), Quality “Summum”.

Featuring a unique flavour and texture, the real novelty of this ham lies both in the recovery of a traditional know-how as well as the preservation of the rare variety of Iberian pig “Manchado de Jabugo”. “Manchado” means “spotted”, a reference to the spots on its reddish coat – a standard Iberian pig is black

“Dehesa Maladúa’s” strong commitment to the environment results in an extremely limited production of ham from the Iberian pig variety “Manchado de Jabugo”. Due to the particular genetics and feeding of these pigs, their hams are a unique, healthy gourmet product, a delight to the senses.

All this makes it the most exclusive, and consequently also the most expensive (4.100 € per unit), Iberian organic ham in the world.
